This lot is composed entirely of the Yellow Colombia ("Amarillo") variety, a naturally occurring mutation of the well-known Colombia cultivar. While prized for its resistance to coffee leaf rust, the Amarillo variety is equally admired for producing a sweeter, more refined cup with delicate citrus and floral character.
Each producer carefully depulps, ferments, washes, and dries their coffee on raised beds beneath solar canopies, allowing for slow, even drying that preserves clarity and sweetness. Every micro-lot is individually evaluated before being blended into a coffee that offers the consistency of a regional lot while retaining the distinctive character of the individual farms.
